"This Cabernet Sauvignon from Napa’s Oak Knoll District presents in the glass as a concentrated, very dark purple wine. The aromas are oak-driven vanilla along with blackberry jam. On the palate this Cabernet delivers on its promise of oak and fruit with Madagascar vanilla bean, Chinese five spice, espresso, and blackberry pie filling. Full-bodied and mouth-coating, the Stringer Cellars has excellent structure that makes it a fine candidate for extended aging. As it stands, this Cabernet is showing nicely in its youth. It would make an excellent partner for a dry-aged bone-in ribeye steak."

Oak Knoll Cabernet Sauvignon 2017

Vineyard:
The 2017 Oak Knoll Cabernet comes from the Williamson vineyard in Oak Knoll. It is planted to clone 337
Cabernet Sauvignon on a very rare sliver of land bordering Dry Creek at
the base of the Mayacamas Mountains. It has taken thousands of years
for Mother Nature to create this special spot. Over millennia the
rocks and gravel that washed down the mountain side were deposited in
this location creating a site with extremely good drainage for Oak
Knoll. The vines then work harder for water and nutrients thereby
producing concentrated fruit resulting in a more structured and complex
wine.
Winemaking:
After
destemming, the hand-picked fruit was sorted and lightly crushed into an open
top stainless fermentation tank. The
must was cold soaked for 5 days before inoculation then pumped over two - three
times a day to maximize extraction during fermentation. The wine spent a total
of 19 days on its skins before pressing.
Tasting Notes:
The wine displays blueberry
strudel, sweet cedar, and graphite on the nose. It dances on along the palate with pronounced
acid and powerful yet elusive concentration of rich, dark fruit, and cocoa. The
tannins are brisk, yet balanced. An homage to the classic Napa Valley Cabernet
of yesteryear. Decant or cellar to fully
enjoy the mysterious nature of this wine as it evolves.
